Hello,  I can’t believe it’s March already, can you? I’m so happy to be back today, it’s Susan from Love of Home with an easy Irish soda bread recipe that is sure to please. Do you find baking bread intimidating? I do, but the more I try it I’m pleasantly surprised with the results and it’s almost always easier than I think! This recipe is super simple with basic ingredients. I married an Irish boy so this is a nod to him and my kiddos, just in time for St. Patrick’s Day. I also made a delicious cinnamon honey butter to go along with it.

Easy Irish Soda Bread
Prep time:
Cook time:
Total time:
Serves: one loaf

Ingredients
  • 4 cups all-purpose flour
  • ¼ cup sugar
  • 1TBSP Baking Powder
  • 1TSP Baking Soda
  • 1 stick of butter softened
  • ---------------------------------
  • 1 cup of buttermilk
  • 1 egg
  • To brush on bread
  • 2TBSP butter melted
  • 2TB buttermilk
  • Honey Cinnamon Butter
  • 1 stick of butter softened
  • ¼ cup powdered sugar
  • 1 TSP cinnamon
  • 2 TBSP of honey
Instructions
  1. In a large mixing bowl, mix flour, sugar, baking powder, and butter together.
  2. Mix egg and buttermilk and add to mixture until combined.
  3. Turn out on floured surface and form into a ball.
  4. Cut an X in the top with a sharp knife.
  5. Brush with butter and buttermilk mix. I did it once before it went in and once in the middle of baking.
  6. Bake a 375 for about 45 minutes or when toothpick comes out clean from center of bread.
  7. Let cool.
  8. For butter:
  9. Mix all ingredient well and enjoy!

The dough isn’t smooth, it’s pretty rustic. I was sure it wouldn’t turn out but it’s delicious!

If you have success and want another great bread recipe, you can head over to Love of Home to find Five hour no-knead bread. You won’t believe how simple this amazing bread is!

Happy Monday!  I have a bit of everything for you today – a free printable, a gold inspired blog hop with some of my favorite Canadian girls, AND a $300 Pot of Gold CASH giveaway!!  Hope it helps you start off your week with a bang!

I’m not sure about you, but I have definitely had enough of winter.  I always seem to get a case of the winter blues at some point each year but, for some reason, I’ve had a tougher time coming out of it this season.  For the past week I have spent some extra time focusing on what is most important to me and reflecting on how to be more present in those little day to day happenings that are often taken for granted.  I still don’t have things quite worked out yet, but this quote really seems to sum things up for me…

Yep. That’s totally me.

I am working really hard right now on just enjoying the colors and letting go of that pot of gold.  It is not always an easy thing to do and I know that I will probably go searching for it again one day but, hopefully, I will always be able to recognize how beautiful that rainbow really is.

If you would like to download your own 8×10 copy, you can find the above version HERE.  Just make sure you print it out as an 8×10 instead of a full size.  It makes a great St. Patrick’s Day printable but works year round too!

I’ve also created a more neutral version for you as well if you are not really into the rainbow colors…

You can download your copy HERE.

Due to a lack of time, I have pretty much given up any plans to actually decorate for St. Patrick’s Day but I didn’t want to miss out on all of the fun! I have been loving all of the rainbow ideas {you can see some of them here}, so we decided to have a little family rainbow chocolate fondue over the weekend.  I think it will make a great St. Patrick’s Day family tradition!

CHOCOLATE FONDUE
  1. Heat 1/2 C whipping cream over medium heat stirring frequently until it just starts to bubble.   Remove from heat.
  2. Add approximately 150 grams semisweet or milk chocolate chunks {we just broke up a chocolate bar}.  Let them soften in the whipping cream for a couple of minutes and then whisk until smooth.
  3. Pour the chocolate mixture into a fondue pot or serving bowl.  We had plenty of chocolate left over!

Hope you all have a rainbow filled week!
