Fall Beverage Bar

I always put together a little beverage bar in our dining room and I love to change it up each season. This year I added this cute pumpkin beverage dispenser and some amber glasses I found at Superstore. And since I had a cute fall punch bowl, I needed to come up with a fall punch!

Apple Cider Fall Punch

While I do love apple cider all on its own, sometimes it’s fun to put a little twist on things! This delicious apple cider fall punch is super easy to make with just a few ingredients.

Apple Cider Fall Punch

Ingredients

  • 4 cups apple cider, chilled
  • 2 cups cranberry cocktail, chilled
  • 1 can frozen orange juice, thawed
  • 2 cups ginger ale, chilled
  • garnish (apple slices, cranberries, cinnamon sticks, etc) optional

Instructions

  • Combine apple cider, cranberry cocktail, and frozen orange juice in a large pitcher or punch bowl. Add ginger ale just prior to serving. Garnish with thinly sliced apples, cranberries, or other garnish.
  • Pour into glasses with ice. Top with additional garnish if needed.

Can you make this fall punch in advance?

Yes! If you want to get a jump start on the recipe, mix the cider, cranberry juice, and orange juice together in a large pitcher or drink dispenser. Refrigerate until you’re ready to serve and then add in the ginger ale and garnishes.

What can I do with the leftovers?

If you have a little bit of punch left and all of the garnishes, you can make up a simmering potpourri. Just add some water, a few cinnamon sticks and bring it all to a boil. Lower the temperature and simmer on low.  It smells just as good as it tastes!

Apple Cider Punch Float

If you want to be extra indulgent, try pouring this over some vanilla ice cream for a fun, fall float! Salted caramel ice-cream would also be good!

Welcome back to another week of the summer seasonal simplicity series! Each week my blogging friends and I are sharing a variety of summer ideas to inspire you for the season. From DIY ideas to summer decorating ideas, there’s something for everyone.  This week, we’ve put together our favorite summer recipes for you. Raspberry and Peach Swirl Popsicles

I love the more relaxed, laid-back feeling of summer, and these raspberry and peach yogurt pops definitely fit the vibe! They’re simple to make with only 4 ingredients and are the perfect way to use up some of that fresh summer fruit.

Raspberry and Peach Yogurt Popsicle Recipe

If you’d like to make your own fruit popsicles, this recipe is a great one to start with. Make up a batch and keep them on hand for a quick afternoon snack or breakfast on the go!

Raspberry Peach Yogurt Popsicles

This raspberry and peach yogurt popsicle recipe is perfect for summer!  A healthy and delicious way to beat the heat - you can even have them for breakfast!

Ingredients

  • 5 cups peeled chopped or frozen peaches approximately 6-7 peaches
  • 1/2 cup maple syrup, divided
  • 2 cups fresh or frozen raspberries
  • 1 cup Greek vanilla yogurt
  • 2-3 tbsp juice (orange juice, lemon juice or other juice of choice) optional

Instructions

  • Using a food processor or blender, puree peaches with 3 tbsp. maple syrup. if you're puree is quite thick (especially if you're using frozen fruit), add 1 - 1 1/2 tbsp. of juice to decrease the thickness as well as reduce the iciness once it's frozen. Transfer to bowl and set aside.
  • Clean the food processor, and puree raspberries with 3 tbsp. maple syrup. If you don't like the seeds, you can strain the puree through a fine sieve placed over a bowl.
  • In another bowl, combine the yogurt with 2 tbsp maple syrup.
  • Layer the peach puree, raspberry puree and yogurt mixture into the mold in any pattern that you would like using approximately double the peach puree as the raspberry. Tap the mold on the counter a few times to ensure there are no bubbles between layers. Leave 1/4 inch of space at the top of the mold to allow for expansion.
  • Dip the tip of a small, sharp knife into the molds, sliding against the sides several times and swirl through the middle of the mold. Again, tap the mold on the the counter a few times to remove any bubbles. Top up the mold if needed if you find your mixture sinks down.
  • Freeze until firm - approximately 4-5 hours depending on your mold. When ready to serve, run warm water over the mold for 10-15 seconds to release the pop.

 

How to choose the best popsicle molds

There are many different molds that you can use to make your popsicles – from the more traditional style, to  a variety of fun shapes and designs. When choosing your mold, think about what type of popsicles you’ll be making and how the size of the molds will best fit in your freezer. Some molds need to be laid flat while others stand upright. I love these stainless steel popsicle molds. They’re really easy to unmold and super durable and dishwasher safe. These silicone molds are another option especially if you like to make bigger batches of popsicles or you can even find collapsible molds. If you’re in Canada, the ones that I used were a super affordable plastic option from Superstore.

Popsicle Tips

  • To remove the popsicles from the molds, run the molds under warm water for 10-15 seconds. Carefully remove each popsicle. If it still doesn’t come out easily, place them under the warm water for a few more seconds.
  • You can adjust the amount of sweetener to your desired taste but remember that the puree will lose some of the flavor/sweetness when it’s frozen. It should ideally have a fairly strong fruit flavor and be more on the sweet side before freezing.
  • Feel free to play around with different fruit flavors and combos! I like this combination of raspberry and peach as the raspberries provide a little tartness compared to the sweet peach flavor, but there are so many different combinations that you can try. You can also switch up the juice to infuse a new taste.
  • The popsicles can be made ahead and kept frozen for up to one month.

Creamy Peppermint Punch

This rich and creamy peppermint punch recipe will be the hit of your Christmas parties! It takes minutes to make, tastes delicious, and has such a pretty, festive look!

Ingredients

  • 8 cups vanilla ice cream softened
  • 1 cup half-and-half (10% milk fat)
  • 1 cup sparkling water, chilled
  • 1/2 tbsp peppermint extract
  • crushed candy canes

Instructions

  • Place ice cream in punch bowl. Add in the half and half and sparkling water and mix until well combined. Add peppermint extract to taste.
  • Pour into glasses and garnish with crushed candy canes.

Notes

Ice cream should be softened at room temperature for 5-10 minutes prior to making but not melted.

Peppermint Punch Variations

I’ve made this recipe a few times and tried a couple of different variations…

  • Use candy cane or peppermint ice cream instead of vanilla ice cream and you can skip the peppermint extract. {The downside is you can’t control the amount of peppermint flavor like you can with the extract.}
  • Lighten it up a little bit by using regular milk instead of the half and half.
  • Make an adult version by adding some peppermint schnapps.
  • Rim the glass with Christmas colored rim sugar or crushed candy canes.
  • Add a candy cane for a stir stick.

Tips for Serving and Storage

This punch is so quick and easy to put together that I usually make it right before serving. It will last a few hours in the punch bowl without being chilled. If you do want to make it ahead of time, you can make it a couple of hours earlier and keep it in the fridge.

I have also placed left overs in the freezer in an airtight container. When you’re ready to drink it, let it soften to the point that you can place it in the blender and just give it a quick blend. Alternatively, you could use popsicle molds and make some peppermint pops!

This easy apple snack board is loaded with crisp apples, delicious dips, caramels, and other apple-inspired treats for the ultimate fall treat. Perfect for a fun snack, appetizer, or dessert.

Apple Snack Board

We always love going apple picking in the fall and it’s fun tasting all of the different apple varieties. Plus, there are so many delicious apple recipes that you can make. From homemade apple sauce and apple crisp, to salted caramel apple pie – I love it all!  Now I’m going to be adding this apple snack board to my list of must-make apple recipes. It’s quick and easy to put together and has all of your favorite fall flavors!

Apple Snack Board Ingredients

While there are lots of different variations that you could do, here is what I included in our apple snack board…

  • an assortment of sliced apple varieties
  • caramel sauce
  • cream cheese apple dip {This is SO good – find the recipe HERE.}
  • nut butter
  • caramels
  • salted caramel waffle cookies
  • dried apples
  • graham crackers
  • Teddy grahams
  • cinnamon
  • pistachios

Other Ideas to Add to Your Apple Snack Board

You can really add whatever you would like to your board, but here are some ideas of items that pair nicely with apples. I love a little cracker sandwich with brie and an apple slice!

  • cheese slices or cubes
  • Brie
  • crackers
  • pretzels
  • dates
  • mixed nuts
  • caramel popcorn
  • honey

How to Put Together an Apple Snack Board

Choose your board.

I used a round wood tray for our board, but you can use a cutting board, serving tray, cookie sheet – really anything that will fit your items. Just be sure that it’s food safe or line it with parchment paper.

Make your grocery list.

Think about what items you would like to go with your apples and write out a general list. It can be easy to buy too much, so don’t go overboard. I find it easiest if I try to stick with some kind of theme/color scheme I always try to look around the store to see if there are any other seasonal items that go with the theme too. You can often find some new items that you haven’t tried before!

Assemble your board.

Add items that require bowls and any larger items to the board first. I added the three dip bowls and the apples first.

If you have room, you can even add a seasonal decor item like the ceramic squirrel I have in the center of ours. This is also a good way to make your board look more full if you don’t want to use as many food items.

Fill in with your goodies.

Fill in any gaps with all of your goodies. If you have a bigger board, you can do 2-3 piles of each item around the board so it’s easier for everyone to reach.

Create some apple labels.

if you’re testing out a variety of apples, you can create these simple apple labels in minutes so everyone knows what kind of the apples their tasting. I listed the most common apple varieties on this printable and you just need to print it out and cut out the apple varieties you’re serving. Use a paper cutter to cut horizontal strips with the words, wrap the strip around a skewer, and secure with double sided tape or glue. Trim with scissors and add a v-cut in the end.

 

How to Keep Apples from Going Brown

If you’re not going to be serving your apple board right away or want your apples to last throughout the party without going brown, here’s the best way I’ve found to keep apples fresh. It might sound a little weird, but a good ol’ saltwater bath totally does the trick. Just fill a bowl with cold water, add salt {approximately 1/2 tsp to 1 litre of water}, and let it soak for about 5-10 minutes. Place a clean paper towel over the top of the bowl to help keep the apples submerged. You can give the apples a quick rinse with cold water afterwards if you’re concerned about a salty flavor, but I find that it’s not really needed if you’re careful not to use too much salt.

Cream Cheese Apple Dip

We always go apple picking a few times each fall and I love tasting all of the different varieties of apples. While the apples do taste delicious on their own, this cream cheese apple dip definitely takes them up a notch! This dip is rich, smooth, and creamy with a yummy caramel flavor.

This would be perfect for a potluck or an afternoon snack and can be enjoyed all year long. Use it for apples or a variety of other dippers – I’m sure you’ll be hooked. You really won’t find anything easier, quicker or tastier to make!

Cream Cheese Apple Dip Recipe

Cream Cheese Apple Dip

This easy cream cheese apple dip is a tasty treat to add to fresh apple slices. It just takes a few minutes to prepare and you only need three ingredients. It doesn't get much simpler than that!

Ingredients

  • 1 (8oz) package cream cheese I've used both regular and low fat versions.
  • 1/2 cup brown sugar, lightly packed
  • 1 tbsp vanilla extract
  • 1-2 tbsp toffee or Skor bits (optional) See other ideas for add-ins in the notes below

Instructions

  • Mix together cream cheese {at room temperature} and vanilla until combined. Add in sugar until it has dissolved and the mixture is smooth.
  • Serve immediately or refrigerate for up to 5 days in an air-tight container.

Notes

Be sure that the cream cheese is softened before mixing so the sugar can dissolve into it.
If you want the dip a little less sweet, cut down the sugar to 1/3 cup.

What are the best apples for dipping?

Really any kind of apple will go well with this dip, but my personal favorites are Jonagold or Honeycrisp. It’s always fun to play around with different varieties so try out a mix of sweet and tart varieties to see what you prefer. Here are some of the more popular apple varieties and their characteristics…

  • Braeburn – tart, sweet, and aromatic
  • Cortland – tart and crisp
  • McIntosh – juicy and sweet
  • Fuji – sweet and juicy
  • Granny Smith – moderately sweet and crisp
  • Jonagold – tangy and sweet
  • Jonathan – tart flesh, crisp and juicy
  • Winesap – very juicy, sweet-sour flavor

What else can I serve with this dip?

Aside from the obvious apple slices, there are a variety of other items that pair nicely with this dip. You can have fun experimenting, but here are some ideas to help get you started…

  • other fresh fruit (bananas, sliced pears, grapes, etc.)
  • graham crackers
  • cinnamon tortilla chips
  • pretzels
  • animal crackers
  • gingersnap cookies
  • spread on a bagel

What else can I add to the dip?

It’s always fun playing around with this basic cream cheese dip. My favorite thing to add is toffee or Skor bits {you can find these in the baking section of most grocery stores}, but here are some other variations I’ve tried…

  • cinnamon or nutmeg
  • nuts
  • mini caramel chips

Tips for the best dip

I’ve made this dip many times, and it’s pretty much impossible to mess up. Here are a few tips though, to get the best cream cheese dip…

  • Make sure the cream cheese is at room temperature before mixing. This will allow the sugar to dissolve into it. You can always soften it for a 10 seconds in the microwave if you don’t want to wait for it to soften.
  • If you want to cut down on the sweetness, you can reduce the sugar to 1/3rd cup.
  • For a more whipped consistency, beat the cream cheese and sugar on high for about 4-5 minutes and then add the vanilla. If you don’t want to bother with washing beaters, a fork and a little extra arm power will mix it up fine.
  • For an extra cute presentation, scoop out a large apple and fill it with the dip.

How do I keep the apples from going brown?

You can also use a couple of tablespoons of lemon juice {or another acidic juice} in the bowl of water instead of salt, but it doesn’t seem to work quite as well and can leave a slightly tart taste to the apples. It’s not necessarily a bad thing – especially since the dip adds sweetness – but just something to be aware of.

This double chocolate zucchini bread is so moist and rich, it will soon become a family favorite. Have it for breakfast, a tasty snack, or a simple dessert to get your chocolate fix!

Double Chocolate Zucchini Bread

Our friends gave us a bunch of extra zucchinis from their garden and I’ve been having lots of fun using then up. I’m not fond of cooked zucchini, but I sure love it for baking. It adds moisture and a little extra texture. Plus, it’s a great way to sneak in a few extra nutrients!

This double chocolate zucchini bread is one of my favorite ways to use zucchini. It’s so moist and delicious, I’m sure it will be one of your favorites too!

Double Chocolate Zucchini Bread

Servings 12

Ingredients

  • 3/4 cup plain Greek yogurt
  • 3/4 cup brown sugar, packed
  • 1/2 cup unsweetened apple sauce
  • 2 tbsp vegetable oil
  • 2 eggs
  • 1 tsp vanilla
  • 1 cup grated zucchini (unpeeled) absorb excess moisture with paper towel
  • 1 1/4 cup all purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp sea salt
  • 3/4 cup semi-sweet chocolate chips or do half semi-sweet and half milk chocolate

Instructions

  • Preheat oven to 350F. Grease a standard loaf pan (8 1/2 x 4 1/2 inch) with non-stick cooking spray and set to the side.
  • In a medium sized mixing bowl, whisk together yogurt, sugar, applesauce, eggs, oil and vanilla until well blended. Stir in the zucchini. Set aside.
  • In a large bowl, whisk together flour, cocoa, baking powder, baking soda, and salt until well blended. Fold in the chocolate chips.
  • Add the wet ingredients to the dry ingredients and stir until just combined and all of the dry ingredients are moistened. Do not overmix. Pour evenly into loaf pan.
  • Bake for 60 minutes or until a wooden pick inserted in the middle comes out clean. Cool for 5 minutes and then remove and cool on a wire rack.

Why bake with zucchini?

In addition to adding some extra nutrients to your baking, zucchini adds a wonderful texture and moisture – similar to adding apple sauce or bananas. Zucchini has a mild flavor so it’s hidden easily and pairs amazingly well with chocolate.

Do I need to peel zucchini?

Nope! The zucchini skin is edible so there’s no need for peeling. Not only is it easier to leave the skin on, but it also adds color, flavor, and extra nutrients to your baking. Just wash your zucchini prior to using and you’re good to go!

How do I shred zucchini?

Grating

If you’re using a box grater, cut off the ends of the zucchini and just rub it against the side of the grater. While the box grater takes a little bit of extra time, it’s quicker to clean up than a food processor so it’s great for shredding if you don’t need a lot.

Food Processor

I usually use the food processor if I’m doing multiple batches. While it’s much quicker to shred the zucchini, it’s a little bit of a longer process to clean up the food processor, so it’s only really worth it for me if I have a lot to shred. When using the food processor, the zucchini tends to be a bit jucier, so I use a paper towel to blot up the excess moisture.

How much zucchini do I need?

One medium zucchini is equal to approximately 1 cup of shredded zucchini. Typically, grocery store zucchinis are smaller than home-grown zucchini so you’ll likely get more out of your harvested zucchini.

Tips for making the best chocolate zucchini bread.

  • Don’t overmix the batter. Quick breads don’t need a lot of stirring, so just try to just barely mix the ingredients together. Overmixing can cause your loaf to sink in the middle or become too dense.
  • Make sure your baking soda is fresh – it should be used within 6-9 months. If it’s been on the shelf longer than this time, save it for your cleaning and purchase a new box for baking.

Pumpkin Spice Granola

As soon as September hits, the pumpkin cravings begin! While I’m not a big fan of the famous pumpkin spice lattes, I do like almost everything else pumpkin. I’ve made this pumpkin spice granola for the last couple of years now, and I usually whip up a few batches throughout the season. It’s SO good and a great way to add in some extra nutrients. I can eat it by the handful, but it also tastes great with milk, topped on yogurt, or even added to other fall baking.

This delicious pumpkin spice granola is the perfect fall twist on classic homemade granola. Warm fall spices combined with real pumpkin, and sweet chocolate chips make it a favorite seasonal treat.

Pumpkin Spice Granola

Ingredients

  • 3 cups old-fashioned oats
  • 1/2 cup chopped pecans
  • 1/2 cup chopped walnuts
  • 1 cup unsweetened coconut the large-flake works much better
  • 1/2 cup pumpkin seeds
  • 1/2 cup flax seeds
  • 1/2 cup pure maple syrup
  • 1/2 cup canned pure pumpkin
  • 1/4 cup butter
  • 3 tbsp brown sugar
  • 1 tbsp pumpkin pie spice
  • 1 tsp cardamom
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 1/2 tsp sea salt
  • 3/4 cup chocolate chips (optional) semi-sweet or milk chocolate

Instructions

  • Preheat the oven to 325F. Line a large sheet pan with parchment paper.
  • In a large mixing bowl, combine oats, nuts, coconut, pumpkin seeds and flaxseeds until well mixed.
  • In a medium pot, combine maple syrup, pumpkin, butter, sugar, spices, vanilla, and salt. Stir over medium heat until the sugar is dissolved. Pour the mixture over the oats. Mix well until no dry oats remain.
  • Spread the wet granola mixture over the sheet pan as thinly and evenly as possible. Bake for 30-35 minutes stirring the granola approximately every 10 minutes to ensure even baking. Cook until the granola is golden and to your desired "crunchy" level.
  • Remove the pan from the oven and let the granola cool completely. Add the chocolate chips and mix well. Alternatively, if you like your granola more "clumpy", you can add the chocolate chips when it is slightly warm. The chocolate will melt slightly and help the granola to stick together in larger clumps. Store in an airtight container.

Tips for Making the Best Granola

  • To make the granola stick together better, you want the oats to bake quite close together so they can stick. You just don’t want them so crowded that they don’t bake evenly.
  • Line the pan with parchment paper so the sweetener stays on the oats rather than the pan.
  • Stir the granola every 10 minutes to ensure even baking. On the last stirring, you can lightly press down on the granola with the back of a spatula to clump the granola together a bit more.
  • Don’t overcook the granola. You just want it to be lightly golden on top. It will continue to crisp up a bit more as it cools.
  • Let the granola cool completely before breaking it up so it’s not too crumbly.

How to Serve Granola

There are lots of different ways that you can use your granola – have some fun experimenting! Here are a few of my favorites that help get you started…

  • serve in a small bowl with your choice of milk
  • add a few tablespoons over yogurt or ice-cream
  • add it to cookies or muffins for a boost of texture and flavor
  • slice apples, spread some nut butter on top and sprinkle with granola

How Long Does Granola Last?

This homemade granola should be stored in an airtight container, in a cool, dry spot. I like to use Wick jars or these mason jars and tops. While I’ve read that homemade granola can last for up to 6 months, I find it tastes best if used within a month or so. It can also be put in the freezer to extend the life for an additional 3 months. It’s a quick recipe to make though, so I prefer making up fresh batches rather than making extra for freezing.

Strawberry Shortcake Kabobs

These strawberry shortcake kabobs make a fun summertime dessert or snack idea. They’re simple to make and you can easily customize the sweetness to your particular taste. They’re perfect for summer parties, BBQs, or picnics. Eat them alone for a quick mess-free snack, or place them on a plate and top with whipped cream or other toppings.

Canada Day Strawberry Shortcake Dessert Ideas

With Canada Day approaching, I thought these strawberry shortcake kabobs would make the perfect treat to add to any Canada Day plans. While these strawberry shortcake kabobs might not be a classic Canadian recipe, their pretty red and white color make them perfect for a Canada Day BBQ or picnic. To make them even more “Canadian” drizzle some maple syrup over them or add a little into your whipped cream if you’re making it from scratch. Red and white sprinkles are always fun too!

I also thought it would be fun to make larger shortcakes using a maple leaf cookie cutter. I’ve put a few recipe modifications below the kabob recipe if you’d like to give these a try.

Strawberry Shortcake Kabob Recipe

These strawberry shortcake kabobs are quick and easy to make using refrigerated biscuit dough. They’re perfect for summer BBQs or Canada Day gatherings and lots of fun to eat!

Strawberry Shortcake Kabobs

Ingredients

  • 1 can Pillsbury biscuit dough (10 count)
  • 1 egg white
  • 1 tbsp water
  • white granulated sugar for sprinkling
  • 10 large strawberries, hulled
  • 10 skewers cut to size
  • 1/4 cup icing sugar for sprinkling
  • whipped cream
  • maple syrup for drizzling (optional)

Instructions

  • Preheat oven to 350F.
  • On a lightly floured surface, roll each biscuit into approximately a 10cm {4-inch} circle. Using a small circle cookie cutter {4cm or 1 1/2 inch}, cut out 3 circles from each biscuit round. If you don't have a cookie cutter, just look for something round around the same size that you can use. {I used the lid from a Slim Fast drink!}
  • Place the small circles on a parchment lined cookie sheet. Whisk together the egg white and water, then brush the mixture onto each biscuit and sprinkle with granulated sugar.
  • Bake at 350 degrees for 5 minutes. Remove from oven and lightly press down the tops with a spatula. Flip them over. This makes both sides flat so it's easier to assemble the shortcake stacks. Continue baking for an additional 4-5 minutes. Transfer to a cooling rack and let them cool before constructing the skewers.
  • Slice the strawberries horizontally into three pieces. Place a shortcake round on a platter, layer on a piece of strawberry and continue alternating until you have three layers of each {the smallest part of the strawberry should be on top}. Add the skewer to secure. {NOTE: If you prefer, you can skewer the bottom shortcake and just continue to add the pieces on the skewer as you go.} Sprinkle with icing sugar.
  • Eat as is, or place on a plate or in a bowl for serving. Top with desired toppings such as whipped cream, additional strawberries, or a light drizzle of maple syrup.

Notes

NOTE: After you cut your circles from the dough, there will be scrap dough left over. You can use this if you would like to make additional shortcake rounds, however, the more you roll it, the less nicely it forms. You could always use the ones that weren't as perfectly round for the middle piece in your skewer.

Modifications to Make the Maple Leaf Strawberry Shortcakes

If you’re making the maple leaf strawberry shortcakes instead of the kabobs, there are just a few little changes to make to the recipe above:

  • On a lightly floured surface, roll each biscuit into approximately a 10cm circle. Using a maple leaf cookie cutter, cut out one maple leaf from each round. My cookie cutter was approximately 8cm.
  • Bake at 350F for approximately 10 minutes on a parchment lined baking sheet, ensuring the bottoms do not burn. DO NOT turn over midway.
  • For the strawberries, chop into smaller pieces than with the kabobs. For a sweeter touch, add 1-3 tsp. granulated sugar and stir together in a medium bowl. Cover and place in the fridge until ready to assemble.
  • To serve, place a maple leaf shortcake in the bottom of a bowl or on a plate. Add extra strawberries, whipped cream, a drizzle of maple syrup or any other topping of your choice. Pierce with a skewer and Oh Canada dessert topper.

Canada Day Treat Toppers

These Canada Day treat toppers can be used in a variety of ways to add a bit of Canadian flare to your Canada Day decor. They just take a few minutes to put together, but look oh so cute!

To make the treat toppers:

  • Download and print out the “Oh Canada” tags.
  • Trim them down with a paper cutter to your desired height.
  • Fold them over a skewer stick, straw, or other thin item, and secure with double sided tape or glue.
  • Using scissors, snip a little ‘v’ at the end of each tag.

Canada Day Reflection

With the heartbreaking news about the remains of the 215 Indigenous children at the residential school in Kamloops, Canada Day will definitely have a different feel this year. I hope that it can be a time to come together as a country to educate and learn about the mistakes of our past. While there are many things about being a Canadian that I’m grateful for, I do recognize and acknowledge that there are many shameful parts of our history {and current practices!} – especially when it comes to colonization and treatment of Indigenous people. There is still a long way to go in regards to reconciliation, but hopefully we can start by using Canada Day as a time of reflection and support for our Indigenous communities.

We’re big Disney fans at our house, and the Mickey waffles at Disney are one of our favorite foods to enjoy at the park. We even had them every morning when we were on our Disney cruise. So, after trying multiple waffle recipes, I finally found one that tastes just like the original!

These waffles are so light and fluffy and taste delicious even without all of the toppings. But, of course, syrup, berries, and whipped cream always make it better!

Mickey Waffles

This delicious waffle recipe makes the perfect light and fluffy Mickey waffles. Works for any waffle maker!

Equipment

  • waffle maker
  • mixer with whisk attachment
  • spatula

Ingredients

  • 2 large eggs, separated
  • 1/2 cup vegetable oil
  • 2 cups whole milk We often use 2% and it works fine too.
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour
  • 4 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup granulated sugar
  • salted butter, melted (for coating waffle maker) NOTE: Using cooking spray on your waffle iron can ruin so the non-stick coating, so stick with butter!

Instructions

  • Preheat your waffle iron.
  • Add egg whites to a mixing bowl. Using the whisk attachment on a mixer, whip on high for about 5 minutes until stiff peaks form.
  • In another bowl, hand whisk together egg yolks, oil, milk, and vanilla. Add flour, baking powder, salt, and sugar and mix until combined. Fold in the egg whites using a spatula.
  • Using a brush, lightly coat the waffle maker with the melted butter. Fill with batter depending on the size of your waffle maker. Cook according to your waffle maker instructions.
  • Repeat with remaining batter.

Notes

If you're serving all of the waffles together and need to keep them warm, preheat the oven to the lowest temperature. Place any finished waffles on a cooling rack on a baking sheet and keep in oven until all of the waffles are done.

If you don’t want to make your own batter, you can actually purchase the actual waffle mix that Disney uses. It’s called Carbon’s Golden Malted Pancake & Waffle Flour and you can find it on Amazon.

Where to Buy a Mickey Mouse Waffle Maker

There are a few different styles of Mickey waffle makers out there at various price points This 90th Anniversary Mickey Mouse waffle maker from Shop Disney is probably the cream of the crop and has the exact Mickey face that you’d find at the park. {You can also find this model at Bed, Bath, and Beyond for a few dollars cheaper if you’re a member.} While it’s a little more expensive than the other ones, it makes 6 waffles at a time and is perfect if you’re feeding a larger crowd.

If you’re short on kitchen space, a smaller model might suit you better. You can find various single waffle Mickey waffle makers on Amazon or Bed, Bath and Beyond. Some have an actual Mickey face and others just have the Mickey shape. This is the Mickey waffle maker that we have. For some reason it’s cheaper on the Canadian site if you’re able to order from there. {Which is super strange as things are never cheaper on the Canadian site!!} They even have a cute Minnie Mouse waffle maker! And if you really don’t want another waffle maker, you could always make regular waffles and use a Mickey cookie cutter to make Mickey shapes.

 


What do I do with leftover waffle batter?

We really only make big breakfasts on the weekend, so I like to make extra batter that we can use throughout the week for fresh waffles on the go. Leftover batter can be refrigerated for 2-5 days {assuming the ingredients that you used don’t expire in this time}. Just store it in an airtight container in the fridge. You could also make up the extra waffles and store the cooked waffles in the fridge or freezer, but I love having mine fresh out of the waffle maker.

I hope you enjoy these just as much as we do! And remember that waffles aren’t just for breakfast! Breakfast for dinner is always fun and you can always play around with the toppings. I love these with ham and cheese!
